Goat Cheese Recipe

Things You'll Need:

  • Colander
  • Cheesecloth
  • Goat milk (1/2 gallon)
  • Fresh lemon juice or vinegar
  • A large pot
  • Ladle
  • Salt and pepper to taste and any other spices/herbs 
Heat milk in stainless steel (non reactive pot) approx 190 degrees. Remove the milk from heat and allow to sit. Add lemon (or vinegar), stirring until the curds separate from the whey. The mixture should look like clumps of cottage cheese when properly separated.
Line a colander with several layers of the cheesecloth. Ladle curds into a strainer, discarding the whey. Allow curds to cool, squeezing as much moisture out of them as possible. Put curds in a bowl and season with sea salt. You can also add other seasonings of your choice, such as Herbs de Provence or whatever else you desired. Press curds into the bowl to make a block, or wrap in cheesecloth. Place curds in the refrigerator for at least 1-2 days before removing and tasting. Banana Pudding

I love a good banana pudding.
This actual recipe has a few additions that most people don't include. Cream cheese and condensed milk make this treat fill any void you may have. :)
The Chessmen cookies are certainly a bonus since they stay crunchy!

I don't usually go for all the heavy cream and butter she includes in her food but I can't complain in this recipe :)

Ingredients

  • 2 bags Pepperidge Farm Chessmen cookies
  • 6 to 8 bananas, sliced
  • 2 cups milk
  • 1 (5-ounce) box instant French vanilla pudding
  • 1 (8-ounce) package cream cheese, softened
  • 1 (14-ounce) can sweetened condensed milk
  • 1 (12-ounce) container frozen whipped topping thawed, or equal amount sweetened whipped cream

Directions

Line the bottom of a 13 by 9 by 2-inch dish with 1 bag of cookies and layer bananas on top.
In a bowl, combine the milk and pudding mix and blend well using a handheld electric mixer. Using another bowl, combine the cream cheese and condensed milk together and mix until smooth. Fold the whipped topping into the cream cheese mixture. Add the cream cheese mixture to the pudding mixture and stir until well blended. Pour the mixture over the cookies and bananas and cover with the remaining cookies. Refrigerate until ready to serve.

 Tomato Pie
Pie Dough (I used Pillsbury)
2Cups shredded sharp cheddar cheese'
1Cup mayo
1 1/2 TBsp chopped fresh parsley
2 chopped green onions, white and green parts
1TBsp grated Parmesan cheese
1 Cup bread crumbs
1 1/2 pounds tomatoes (sliced 1/2 thick)
Preheat oven 425 degrees. In a bowl combine cheddar cheese mayo, parsley, green onions, Parm cheese and bread crumbs, mixing completely. Layer 1/3 of the tomatoes in the pie pan, covering the bottom of the pie crust. Spread 1/3 of the Parm cheese mixture on top of the tomatoes and repeat. End layers with cheese mixture on top. Bake for 30 minutes or until top is bubbling and brown. Serve warm!
